Kitchen Spotlight: Sous Chef Earl “Bear” Byrd
The St. Paul Grill
In the heart of downtown Saint Paul, where classic American dining meets refined execution, Sous Chef Earl “Bear” Byrd plays a pivotal role in upholding the culinary standards that define The St. Paul Grill.
Finding His Place in the Kitchen
Bear’s culinary journey began shortly after high school, inspired by the chefs he watched on the Food Network. Culinary school offered more than technical training; it provided a sense of structure, purpose, and belonging that shaped his approach to kitchen life. The kitchen became a place where effort is rewarded, details matter, and teamwork is essential—values that ultimately led him to The St. Paul Grill.
Joining The St. Paul Grill
After years working in kitchens across the Twin Cities, Bear joined The St. Paul Grill in August 2022 and immediately recognized a natural fit. He was drawn to the rhythm of the line, the quality of the ingredients, the seasonal menus, and the pride shared by every member of the team. Now serving as Sous Chef, he continues to grow as a leader while honoring the restaurant’s culinary legacy.
Cooking as an Act of Service
At the core of Bear’s approach is the belief that cooking is an act of service. He views food as a way to bring people together, spark conversation, and create lasting memories. He credits much of his growth to the mentorship and example set by Chefs Gheorge, Tom, and Mauricio, each known for their passion, precision, and distinctive styles.
Beyond the Line
When he’s not in the kitchen, Bear enjoys time with his new puppy and prefers cooking simple, nourishing meals for himself—an understated reflection of his thoughtful, grounded approach to food.
As The St. Paul Grill continues to be a cornerstone of the Twin Cities dining scene, leaders like Earl “Bear” Byrd ensure its traditions remain strong while its kitchen continues to evolve.
